Spotlight on Durham Correctional Center - page 2

More than 600 meals a day are prepared at Durham Correctional Center. Sixteen inmates are assigned to the kitchen and are supervised by two officers. One of the officers said that Food Services Supervisor Saint Silver makes sure his staff knows as much as he knows about food preparation. Silver is a former McDonald’s general manager and currently is pastor of a church in Henderson where he lives. Not only is he an avid golfer and a fan of Andy Griffith, but Assistant Superintendent David Cates has a green thumb as well. Thanks to his oversight, the lawn at Durham Correctional Center is so thick and green, he is tempted to hit a few golf balls. Cates has worked 18 years at the Durham prison.
